- Forego the lobster, and offer spiffier appetizers to make up for the loss
- Serve sparkling wine instead of champagne

My "fancy" parties are like... a tray of veggies from QFC, Martinelli's in 1 dollar plastic champagne flutes if I'm feeling super classy, and, like... lemonade with vodka or everclear in it to get everyone drunk fast/cheaply. :P
